CHOCOLATE BISCUIT PUDDING

A simple way to do a dessert which is unique to Sri Lanka and once you try it you will be going back for more, So lets make it shall we?

INGREDIENTS:

  • 600 gms Marie Biscuits
  • 200 gms Cooking chocolate + some extra for drizzzling
  • 100 gms Sugar
  • 04 Eggs (separated)
  • 300 gms Butter
  • 50 gms Roasted Cashew nuts, chopped
  • 10 tbsp Condensed Milk
  • Water as needed
  • Vanilla Essence a few drops

DIRECTIONS:

  1. Double boil the chocolate, when the chocolate melts add 1/2 cup milk and stir until it thickens and set aside.
  2. In a pan add sugar and pour water to cover the sugar and bring to boil, once it starts boiling check for the consistency ( when we take the sugar syrup and drop it into an ice cube and it will form a ball) if this happens this is the correct stage, switch off flame and set aside.
  3. Beat egg yolks until thick and creamy, pour the sugar mixture and beat well and set aside to cool.
  4. In another bowl, beat butter until creamy then add the melted chocolate (save some to drizzle ), and beat well. Add in 5 tbsp of Condensed Milk, the sugar-yolk mixture and vanilla essence as well, beat all until well combined and set aside.
  5. Separately, beat the Egg whites until soft peaks form. Fold this into the butter cream mixture until well combined. Refrigerate until you start to assemble.
  6. Grease baking tray (I used a 12*6 inch) with some butter, In a small bowl combine 5 tbsp Condensed milk with water to form a milk consistency.
  7.   Dip the biscuits in the condensed milk mixture (make sure not to keep the biscuits too long in the mix) and layer it on the tray making sure to fill all gaps in between.
  8. Then spread the creamy mix (make sure to stir it once you have taken it out of the refrigerator) on top of the biscuits.
  9.  Sprinkle some roasted cashews and drizzle some melted chocolate on top of it. Repeat process until all cream is used up. Finally sprinkle some cashews and drizzle some chocolate.
  10. Allow it to set in the refrigerator and Enjoy!
NOTES:
⇒ Make sure to wash and dry clean the beaters before you beat other mixtures one after the other.
⇒You can make this recipe and store in the refrigerator for up to 4 days.
