KOKIS
It's Avurudhu and what is more special than to make some kokis and other sweetmeats to start off this special day with?
When my grandma came to visit me, I got hold of her and got this recipe from her and tried it. Now it's my turn to share it with Ya'll. Lets now look at the ingredients..Shall we?😉
Yields: 75 kokis
Time: 30 mins
- 500 gms- Flour (All purpose)
- 1 Egg
- 1/4 tsp Turmeric powder
- 1/2 tsp Salt
- 1 tbsp Sesame seeds (black)[wash and sieve to get rid of stones]
- 5 tbsp White Sugar
- Coconut Milk to knead (around 4 and 1/2 cups)
- Oil for frying
METHOD:
- In a medium sized bowl mix all dry ingredients with coconut milk and make sure its free of any lumps.Set aside.
- Heat oil in a pot, once heated dip the kokis mold in hot oil for a few seconds (this will make the kokis easy to remove from the mold).
- Next, dip the mold around 3/4 of it in the kokis batter & hold it in oil for around 2 mins.
- Then using a stick carefully remove from the mold and let it fry until golden brown.
- Repeat process and fry the others by mixing the batter now and then without allowing the flour to settle in the bottom of the bowl.
- Enjoy!!
⥤ Dip the batter around 3/4 of the mold or it will be difficult to remove the kokis.
⥤ You can store the batter in the refrigerator for a day and fry them, but mixing the batter first.
⥤ If you feel that the kokis are thick you can add more coconut milk but make sure that the batter is not soo thin.
⥤ Adding too much sugar will burn the kokis so, make sure not to add more.
⥤Add white sugar instead of brown to get golden color kokis.
