SOFT DOUGHNUTS

It's Doughnuts Day !!! 

Ever wondered how you can make soft handmade doughnuts all by yourself? Simply follow this recipe and Enjoy!


Makes : 20 medium sized
Ready In: 4 hrs 

INGREDIENTS:

  • 2 and 1/2 cups All purpose Flour
  • 04 tbsp Sugar
  • 03 tbsp Butter,softened
  • 1/2 tsp Salt
  • 1/2 cup Milk
  • 01 egg
  • 02 tsp dry active Yeast
  • 1/3 cup Dough Enhancer (which will be instructed in the recipe below)
  • Oil for frying
For Dough Enhancer-
  • 1/3 cup all purpose flour
  • 3/4 -01 cup water
For Pastry Cream-( makes 01 cup)
  • 3/4 cup Milk
  • 1/4 cup Sugar
  • 1/8 cup Flour
  • A pinch of Salt
  • 02 Egg yolks
  • 1/2 tsp Vanilla Essence

DIRECTIONS:

  • Making the dough enhancer-
  1. Mix flour and water together in a small pan over medium heat until it thickens and swirl begans to form. Remove from flame and set aside to cool.
  • Making the dough-
  1. Put all the ingredients under "for the dough" including around 1/3 cup of the dough enhancer and knead until it becomes soft, allow it to rise for approx.45 mins.
  2. Then punch down and allow it to rise again for further 30-45 mins.
  3. Make around 20 balls and place it on a floured surface (make sure you dust the surface with flour very well because as they start to rise they will tend to stick to each other).
  4. Allow it to rise for another hour.
  5. Heat oil over medium heat, take one ball make a hole with your hand (don't handle too much, the more you handle the harder it gets as well as begin to loose its shape) and put it in the hot oil.
  6. Repeat with remaining balls, fry all until golden and put in a paper towel to drain excess oil.

  • Making the Pastry Cream-

  1. Warm milk in a saucepan until you see whips of steam.(It shouldn't be actually boiling)
  2. In a medium bowl, whisk together sugar,flour and salt. Add the egg yolks and whisk into the dried ingredients.Make sure you combine the ingredients thoroughly- this will form a thick paste.
  3. Pour the hot milk into the mixture little by little and combine.
  4. After all the milk is added to the mixture, pour back everything into the saucepan.
  5. Set the pan over medium heat and keep whisking constantly.When it reaches a pudding like consistency and when large bubbles pop on the surface, remove pan from heat.
  6. Stir in Vanilla, cover and chill completely.
  • Assembly-
  1. Cut doughnuts and apply the chilled pastry cream.
